Creamy sauce chicken
I love to share my cooking through instagram stories, and this particular recipe had a lot of positive feedback so I am very happy to share this one with you!
The star of this dish is the creamy creamy yummy sauce, the mushrooms, sun dried tomatoes and artichoke hearts pair perfectly with all the other components of the dish. This sauce looks and tastes so fancy, but it is anything but that, you can make it any day of the week because it does not involve a lot of prep or cooking.
Considering our creamy sauce is packed with flavor, the other 2 components are simple to enjoy topped with the sauce. The chicken breasts are cooked in a pan with only salt and pepper, and the fluffy white rice with our chicken stock. This recipe needs no more than these 3 beautiful components that when combined melt in your mouth.
To finish this dish, I just chopped some spinach which gives it a fresh twist, green beautiful color on top, and when everything is mixed together the spinach starts to slowly wilt and blend perfectly.
Creamy sauce chicken
This is a perfect example of how an ordinary dish like rice and chicken can be made into an excellent meal.
ingredients:
- 2 chicken breast
- 3 sundried tomatoes in oil
- 1/2 small onion
- 1 garlic clove
- 3 artichoke hearts
- 100g cremini mushrooms
- 1 cup heavy whipping cream
- 1 1/2 cup chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- 1/2 cup jasmin rice
- 1/4 cup spinach
instructions:
- Bring 1 cup chicken broth to boil in a small pot, add rice, salt and pepper, set to low heat, cover and cook for 20 minutes. Let sit covered for 5 minutes and then fluff rice with a fork.
- Chop onion and garlic in small pieces, cut tomatoes into thin strips, mushrooms into slices 1/2cm, artichokes hearts into thin pieces, and spinach to thin strips.
- Salt and pepper chicken breast and cook over medium heat until golden brown. Remove and reserve. Add mushrooms and cook until golden, remove and reserve.
- Add onion to skillet and cook until translucent, add garlic and cook until aromatic (aprox 30 seconds). Add heavy cream and 1/2 cup of chicken broth, add salt, pepper and bay leaf. Bring to a boil, reduce heat and simmer.
- When sauce start to thicken add tomatoes, mushrooms and artichoke hearts. Warm up ingredientes in sauce then remove from heat.
- Slice chicken unto 1cm strips, place on top of rice, spoon sauce on tip, place spinach on top and enjoy!
Pollo en salsa cremosa
Esta receta es una gran idea de cómo convertir una receta tradicional de pollo con arroz en una receta deliciosa.
ingredientes:
- 2 pechuga de pollo
- 3 tomates deshidratados en aceite
- 1/2 cebolla pequeña
- 1 diente ajo
- 3 corazón alcachofa
- 100g champiñones cremini
- 1 taza crema para batir
- 1 1/2 taza caldo pollo
- 1 hoja laurel
- 1 cucharadita tomillo
- 1/2 taza arroz jazmín
- 1/4 taza espinacas
instrucciones:
- Hervir 1 taza de agua en una olla pequeña, agregar arroz, sal y pimienta, bajar la flama y cocinar cubierto por 20 minutos. Esponjar con un tenedor.
- Cortar cebolla y ajo, cortar tomates en tiras pequeñas, rebanar champiñones, corazones de alcachofas en rebanadas delgadas y espinaca en tiras.
- Salpimentar pechugas de pollo y cocinar a fuego medio hasta ligeramente doradas. Remover del sartén y reservar. Agregar champiñones y cocinar hasta que se evapore el líquido, remover del sartén y reservar.
- En el mismo sartén agregar cebolla y cocinar hasta traslúcida, agregar ajo y cocinar hasta aromático (aprox 30 segundos). Agregar crema, 1/2 taza caldo pollo, hoja de laurel, sal y pimienta. Dejar hervir y reducir a fuego bajo.
- Cuando la salsa empiece a espesar agregar tomates, champiñones y corazones de alcachofa. Calentar los ingredientes en la salsa y remover del fuego.
- Rebanar pollo en tiras delgadas, servir con el arroz, vierta la salsa arriba del pollo y poner tiras de espinacas arriba.
