Mango + Strawberry + Coconut Sorbet

When one of your friends comes to your house and hands you over a bag full of mangos there is only one possible option: SORBET!

For this super hot summer days I decided to use my gifted mangos to do a sorbet, since they were amazingly sweet. When using fresh fruits to make frozen goodies I prefer dairy-free, because fruits have a lot of flavor that I think when you mix them with milk or cream they tend to loose some of that flavor (don't get me wrong I love dairy ice cream, if you ask me to make a vanilla and nutella I am there!).

To make this fresh and yummy I decided to mix the mangos and strawberries and insted of useing a water-sugar base I subbed for creamy coconut milk, giving it a bit of coconut flavor and that almost ice cream consistency that we all love. 

You are not going to believe that this recipe is so simple that it only requires 5 ingredients: mangos, strawberries, coconut milk, sugar and salt. The tricky part of this recipe will be our ice cream maker, I borrowed from my sister her ice cream maker Kitchen Aid attachment, but the great thing about this recipe is that if you like soft serve, you can directly freeze the fruit mix and end up with fresh sorbet.

For the Kitchen Aid attachment you have to place it in the freezer for at least 24hours, if not halfway through the process the attachment will start to melt and we won't get that beautiful ice cream we are striving for.

ingredients:

  • 3 cup fresh mangos
  • 1 cup fresh strawberries
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1 pinch salt

instructions:

  1. If you are using the Kitchen Aid ice cream maker attachment stick it in the freezer for at least 24 hours to be ready to use.
  2. Chop the mangos and strawberries, put all the ingredients in the blender and  blend until smooth, taste fro sweetness, you can add more sugar if you fresh fruit is not as sweet.
  3. Place in a bowl, cover and refrigerate. (You can refrigerate as long as your ice cream maker is freezing).
  4. Remove ice cream maker attachment and place in mixer. Star the mixer on stir and add the mixture. Mix on velocity number 4 for 20 to 25 mins.
  5. When done, the sorbet will be soft serve, if you like the consistency you can stop and enjoy, if you like a firmed consistency place in a container and freeze for 3-4 hours.
  6. Remove from freezer, scoop out and enjoy!

Si estas buscando un snack refrescante para los días de verano esta es la receta para ti.

ingredients:

  • 3 tazas mango fresco
  • 1 taza fresas frescas
  • 1 taza leche coco
  • 1/2 taza azúcar
  • 1 pizca sal

instructions:

  1. Si estas utilizando el accesorio para hacer nieve Kitchen Aid, meter en el congelador por 24 horas para utilizar.
  2. Cortar el mango y fresas, poner todos los ingredientes en la licuadora y licuar hasta que quede una mezcla suave, probar para verificar la dulzura, puedes agregar más azúcar si la fruta no está tan dulce.
  3. En un tazón cubierto refrigerar la mezcla. (Puedes refrigerarla mientras tu accesorio para hacer nieve se esté congelando).
  4. Remover accesorio para hacer nieve y colocarlo en la batidora. Empezar en la primera velocidad y agregar la mezcla de frutas. Mezclar en velocidad número 4 por 20 a 25 mins. 
  5. Cuando quede listo, el sorbet sería helado suave, si te gusta esta consistencia puedes servir y disfrutar, si buscas una consistencia más firme, poner en un contenedor y congelar por 3-4 horas.
  6. Sacar del congelador, servir y disfrutar!
