My guilty pleasure breakfast/brunch is pancakes! I love pancakes so I try to come up with healthy variations of the traditional fluffy yummy goodness pancakes, one of my favorite recipes are this amazing Oat Pancakes. 

They are so rich and flavorful that definitely hit the sweet spot for pancake cravings. They are a healthy alternative for breakfast, for kids or adults.

I made this pancakes on a Sunday morning, since I was making healthy rich pancakes I decided to go overboard with my toppings, so I did: nutella, almond butter, honey, coconut, almonds and berries, which made everything so amazing and delicious.

These pancakes are your base and you can top them with whatever you like or have, they also go great with some peanut butter, bananas and maple syrup, or even some granola and honey.

Oat Pancakes

These oat pancakes are the perfect alternative to traditional pancakes, so you can definitely go overboard with the toppings.

ingredients:

  • 3/4 cup all-purpose flour
  • 1/4 cup oats
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 1/2 tablespoon vegetable oil

instructions:

  1. Combine flour, oats, baking powder, and salt (dry ingredients) in a bowl and mix.
  2. Combine milk, egg, and vegetable oil (wet ingredients) in a bowl and mix.
  3. Add wet ingredients to dry ingredients and stir to combine.
  4. In a sauté-pan or crepe pan, over medium heat spray with oil (to prevent sticking), add 1/3 cup of pancakes batter and cook until lightly browned on each side.
  5. Work in batches to no overcrowd the pancakes.
  6. Stack pancakes in 2 plates and pour over pancakes you favorite toppings and enjoy.

Estos pancakes de avena son la perfecta alternativa para los pancakes tradicionales, por lo que definitivamente puedes ponerle los toppings que quieras.

ingredientes:

  • 3/4 taza harina de trigo
  • 1/4 taza avena
  • 1 cucharadita polvo para hornear
  • 1/8 cucharadita sal
  • 3/4 taza leche
  • 1 huevo
  • 1/2 cucharada aceite vegetal

instrucciones:

  1. Combinar harina, avena, polvo para hornear y sal (ingredientes secos) en un tazón y mezclar.
  2. Combinar leche, huevo y aceite vegetal (ingredientes húmedos) en un tazón y mezclar.
  3. Agregar los ingredientes secos a los húmedos y combinar.
  4. En un sartén o crepera, a fuego medio, rociar aceite (para evitar que se peguen). Agregar 1/3 taza de masa y cocinar hasta ligeramente dorados en ambos lados.
  5. Trabajar por partes para no saturar el sartén.
  6. Apilar los pancakes en 2 platos y agregar tus ingredientes favoritos.
