Spinach & Cheese Ravioli w/ tomato sauce
Lately I have been super busy that I have very little time to cook lunch for me and bae, so I am looking for fast wholesome recipes that make a great meal, this recipe is just that!
I bought these ravioli at Costco (I LOVE COSTCO), and they have a lot of options, these are in the refrigerated section. The pasta is amazing, the filling is great so I decided to pair these with my mamma rosa sauce that as you all know I keep extra frozen, cooking time is literally down to waiting for the water to boil.
I defrost the sauce directly in a pot, and taste for any missing salt and pepper, if the sauce is to thick I add a little pasta water to thin out.
Since the ravioli are fresh they only take a few minutes to cook, so I place them immediately after in the pot, cover with sauce and add to the plate.
I like to keep fresh baby spinach at hand so I can add a simple salad to any meal and make it a true wholesome meal.
Spinach & cheese ravioli w/ tomato sauce
Super easy delicious recipes you can make in 15 mins or less.
ingredients:
- 1 ravioli chamshell
- favorite tomato sauce (I used my frozen mamma rosa)
- parmesan cheese
- 3 cups baby spinach
- 1 teaspoon balsamic vinegar
instructions:
- Bring a pot of water to boil
- In a saucepan add tomato sauce and warm, if the sauce s to thick add a little of the pasta water to thin out.
- Add ravioli to the salted pot of water and cook according to instructions.
- Drain ravioli and add to tomato sauce, toss carefully avoiding to break the ravioli. Remove from heat.
- In a bowl combine 1 teaspoon of balsamic vinegar, 2 teaspoons of extra virgin olive oil, salt and pepper and whisk until vinaigrette is done. Add baby spinach and toss.
- Divide salad and ravioli between plates, sprinkle with parmesan cheese and enjoy!
Ravioli de espinacas & queso con salsa de tomate
Receta super simple y deliciosa que puedes hacer en 15 mins o menos.
ingredientes:
- 1 caja de ravioles
- tu salsa de tomate favorita (yo utilizo mi salsa mamma rosa congelada)
- queso parmesano
- 3 tazas espinaca baby
- 1 cucharadita vinagre balsámico
instrucciones:
- Hervir una olla con agua y agregar sal.
- En un ratén agregar la salsa de tomate para calentar, si la salsa está muy espesa agregar tantita agua de la pasta para diluir.
- Agregar los ravioles al agua sala sirviendo y cocinar de acuerdo a las instrucciones del empaque.
- Escurrir la pasta y agregar a la salsa de tomate, revolver con cuidad para evitar romper la pasta. Apagar el fuego.
- En un tazón combinar 1 cucharadita de vinagre balsámico, 2 cucharaditas de aceite de oliva extra virgen sal y pimienta y mezclar hasta que la vinagreta quede lista. Agregar espinaca baby y combinar.
- Dividir ensalada y ravioles en 2 platos, agregar queso parmesano y disfrutar!
